What a wonderful swap we had. I served Sopa De Albondigas with Agua limon, salsa and tortillas. It was fantastic. This is a traditional Mexican comfort food. There are many recipes for this, but the one below is the one I used.
Sopa De Albondigas
Meatballs:
½ lb lean ground beef
½ lb chorizo sausage
½ C cooked rice
1 egg, beaten
½ carrot minced
½ C cilantro leaves, minced
½ t salt
¼ t pepper
1 t ground cumin
Soup:
6 C Chicken Broth
½ C onions, chopped
3 stalks celery, chopped
1 16 oz. can diced tomatoes
½ t ground cumin
1 t Mexican oregano
½ C cilantro
1 large zucchini
Salt to taste
Pepper to taste
Make meatballs first.
Sauté vegetables in little oil.
Add broth and bring to boil.
Reduce heat and simmer 10 minutes.
Bring back to slight boil.
Drop meatballs in soup while low boil.
After 10 minutes turn to simmer and cook another 10 minutes.
Top the soup with rice if desired.

2010 SWAP
Once again, we had a great time swapping soup. I made 15 bean soup to freeze and swap with. I served Chicken Mulligatawny with pita bread and dip for dinner. I also made a Chai Tea from scratch. It was delicious! I love the "soup talk" to find out about each recipe.
My favorite part after the swap is eating the soup. I warm the soup with anticipation, not really know how it will taste. I serve the soup as suggested by the cook and dip in with my spoon, always with a smile on my face. The soups have been incredible. Thank you to all the great cooks who have participated in the Annual Soup Swap with me. I am looking forward to the 3rd!!
